Baking Rules - Recipe #2 . . .

Hello:  Today is TGIF - a great day to check out a new recipe to try when you get home from work for your weekend!  Your spouse, significant other or kids, or co-workers if the cookies make it until Monday will be so happy! 

Coconut Oatmeal Cookies

1 c. butter (softened)
2 c. brown sugar
1 tsp. vanilla
2 eggs
2 c. all purpose flour
2 c. oatmeal
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 c. flaked coconut

In a mixing bowl cream butter, sugar and vanilla.  Add eggs.  Stir well.  Stir in dry ingredients and the coconut.  Bake at 325 degrees for 14-16 minutes!

I know someone tried my chocolate chip bar recipe from yesterday - so hopefully you will share this blog with other baking fanatics and lets get baking  :)

Recipes for you to try!

Okay - I love to bake - this is no secret, you can ask practically anyone who knows me and they will agree with this statement.  I would love to somehow do it for a living - but how to make that happen?  Any ideas?  I know I need Oprah or Ellen or someone to try something I make and proclaim it "fabulous" but really, is that likely to happen, NOT.  I am here asking for advice and opinions.  In the meantime I am going to share with you that I don't enjoy cooking - I have to do it to sustain this body of mine (and my family's as well) but baking is where my heart is.  For you to try today - a recipe - I call them EZ Chocolate Chip bars!

EZ Chocolate Chip Bars
1 c. butter, softenend (do not use margarine)
1 c. brown sugar
1 tsp. vanilla
Mix these ingredients together.
Stir in 2 c. all purpose flour
1-2 c. chocolate chips (semi-sweet or milk chocolate)  My family tends to prefer the milk chocolate!

Bake in a 8 x 11 cake pan, @ 350 for about 25 minutes (until top is a golden color).  Best eaten freh - very easy and YUMMY!

To blog or not to blog?

Okay - at first I thought, how hard can this blogging thing be?  Now I am thinking, harder than I thought.  Trying to be witty and entertaining is not always an easy task, especially when you look out the window and it's gloomy, gray, cloudy and raining.  Really, all a person wants to do in a situation such as this is curl up with a good book and a comfy blanky on the couch or heck, even in the bed.  BUT, one does not make any money doing that and in this world we all need that, so here I am trying to type a blog, to get some followers, to strike it big (ha!).  How do the writers do this?  How do you get followers?  Anyone?  I think some days I can be funny and entertaining but how do I get people to listen?  Ready my blog?  I have often thought I could write a book - but how to start?  Anyone, again, really I am looking for pointers, advice, anything you can offer good or bad will be considered.  In the meantime, it's nearly 11:27 a.m. and I best get showered and to the grocery store today - no eggs, no milk, no fresh fruit - you get the picture, the situation in the fridge is DIRE!  When I get back, I am hoping for some words of wisdom or advice . . . .People, that means you!

Speaking of movies . . .

Note how in my last post I mentioned that my hubby and I are seriously behind on movie watching?  Well, no kids home (as also previously noted) so Monday night he got home from work and said we should go to the movie "The Other Guys" it was at the theater here in our town so why not?  I will tell you why not, now, because any movie with Will Ferrell in it makes aforementioned hubby, laugh until he is either crying or rolling around in his chair so much that I thought he may actually roll right out of the chair and cause a scene for the other 6 people in the movie theater.  I however, don't particulary enjoy that type of humor and couldn't believe I had let my hubby shell out his hard earned dollars to take me to this movie - hah!  Anyways, we both managed to make it through the movie, without me walking out or Ken falling out of his chair - tears I cannot promise were not shed on his part though, he was laughing quite hard several times.  I told him upon walking out to the car after the movie that there is a reason I usually don't let him pick the movies we go to very often, and he had just verified that reason once again.  I guarantee you the next movie we rent or go to will be a chick flick  :)  Yeah for me picking the movies . . .
