Well, we here in West Central Minnesota had another SPRING like day yesterday and then today we are back to gray, cloudy and a WIND like no other roaring at us from the south. Today was recycling day in my neighborhood, and I work from home, so I spent a good chunk of the morning chasing down the neighbor's plastics that were blowing into my yard (before the recycling man came to pick them up!). Since it's another day to warm up the kitchen by turning on the oven, I thought it sounded like a good day to whip up some cookies.
SNICKERDOODLES
1 c. Crisco shortening (not butter flavor)
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
Mix these ingredients together. Roll into walnut size balls. Roll the dough balls into a mixture of cinnamon/sugar. Bake 8-10 minutes! Eat :)
Anyday is a good for a snickerdoodle or 2 or 3 or more.
