A cookie a day ~ Almond Chocolate Biscotti

A good recipe for a day like today.  My hubby has been down for about 8 days with a bad sinus infection, he decided to share the joy and now my daughter and I have both not felt well since Friday night.  UGH!  I had been cloroxing everything in sight to hopefully avoid sickness but I guess it didn't work this time.  I needed to get a cookie of the day recipe posted, however, so here you go!

Almond Chocolate Biscotti
1 pkg. chocolate cake mix
1 c. all-purpose flour
1/2 c. butter, melted
2 eggs
1/4 c. chocolate syrup (such as Hershey's)
1 tsp. vanilla
1/2 c. slivered toasted almonds
1/2 c. mini chocolate chips
1 pkg. vanilla or white chips
2 tbsp. shortening

IN a large bowl, beat the cake mix, flour, butter, eggs, chocolate syrup and extract until well combined.  Stir in almonds and chocolate chips.  Divide dough into halves.  Make a 12 x 2" log on two seperate baking sheets.  Bake @ 350 degrees for 30-35 minutes, or until firm to the touch.  Remove and cool for 20 minutes.  Carefully cut diagonally with a serrated knife into 1/2" slices.  Stand up on baking sheet and bake an additional 15 minutes.  Cool.  Melt vanilla chips and shortening together, and drizzle over cooled biscotti!  YUM!
