My life the past several days has been a busy one, that has kept me away from home and my cookbooks! On January 12, my dad had surgery to have his cancer laden prostate removed, 5 hours away at a hospital in northern Minnesota at almost exactly the same time, my brand new niece was born, Peyton Vivian Osmundson is here! It was a long day for all involved, but the outcomes on both ends have been positive and good.
Here is a recipe that I found worthy, off of the cookie-a-day calendar:
Chocolate-Drizzled Ginger Cookies
1 egg
1 egg yolk
1 c. sugar
1/2 c. butter, melted
2 1/4 c. all-purpose flour
1/4 tsp. baking soda
1 1/2 tsp. ground ginger
1/4 tsp. salt
6 oz. bittersweet chocolate, melted
Mix together the egg, egg yolk, sugar and then stir in the melted butter. Stir together the dry ingredients and add them to the egg mixture, until combined. Chill until firm.
Preheat the oven to 375. Roull out the dough and cut into 2" rounds. Bake for 15 minutes, until golden. Cool. Dip a fork in the melted chocolate, and drizzle over each cookie on the rack.
That is awesome that both hospital patients are doing well. Sometimes life makes us take a break from other things and that is ok. Thank you for sharing the cookies with Trick or Treat Tuesday!!!
