A cookie a day ~German Chocolate Sandwich Cookies

Today, it is beautiful outside, (other than a bit of a breeze) we have SUNSHINE!  Which in January in Minnesota is a great thing.  Keeps everyone smiling and happy.  So will these cookies, so get in your kitchens, crank up the oven and get baking!

German Chocolate Sandwich Cookies
1 3/4 c. all-purpose flour
1 1/2 c. sugar
3/4 c. butter, softened
2/3 c. unsweetened cocoa
3/4 tsp. baking soda
2 eggs
2 tbsp. milk
1 tsp. vanilla
1/2 c. chopped pecans (optional)
Canned Coconut/pecan frosting (or you can make your own!)

Heat your oven to 350 degrees.  Combine flour, sugar, butter, cocoa, baking soda, eggs, milk and vanilla.  Blend well.  Stir in pecans.
Roll dough into 1" balls.  Place on cookie sheet and flatten slightly. 
Bake 9-11 minutes or until almost set. Cool. Spread about 1 tbsp. of frosting onto the bottom of a cookie - top with another cookie!  EAT!
