Here was a good little treat, however, make them and eat them within 24 hours, the crust gets soggy if you don't.
They were tasty!
Lemon Pie Cookie Tarts
1 tube of regrigerated sugar cookie dough, or make your own sugar cookie recipe - this is what I did!
2 egg whites
1 box Jell0 Cook Lemon Pudding (make according to directions on the box)
Take a small ball of your cookie dough and place into a greased spot on a mini muffin pan. Fill all 24 spots. Use a tart shaper (if you have one) or pinch up each side. Bake at 350 for about 10 minutes unitl golden brown. Cool. Spoon cooled pudding into each tart. Whip your egg whites and add a bit of sugar and cream of tartar as you would for meringue. Spoon a dollop onto each tart. Return to the oven and bake until the meringue gets a bit golden.
