Here it is the Peanut butter (since it's National Peanut Butter Day) related cookie recipe, I almost posted a cupcake recipe but remembered, I MUST do a Cookie-A-Day~!
Peanut Butter & Chocolate Cookie Sandwiches
1/2 c. Peanut Butter chips
3 tbsp. + 1/2 c. butter, softened and divided
1 1/4 c. sugar divided
1/4 c. corn syrup
1 egg
1 tsp. vanilla
2 1/4 c. all-purpose flour, divided
2 tsp. baking soda
1/2 c. cocoa
5 tbsp. butter, melted
additional sugar
about 2 dozen large marshmellows
Heat your oven to 350 degrees. Melt peanut butter chips and 3 tbsp. butter over very low heat. Remove and cool slightly.
Beat remaining 1/2 c. butter, 1 c. sugar until fluffy. Add corn syrup, egg and vanilla and blend well. Stir together your 2 c. flour and baking soda, add to butter mixture, blend well. Remove 1 1/4 c. batter and place in a small bowl, with a spoon stir remaining 1/4 c. flour and melted peanut butter mixture into the batter.
In the batter you put in a seperate small bowl add 1/4 c. sugar and the 5 tbsp. butter melted. Add the cocoa powder to this as well.
Shape each flavor of dough into 1 " balls, roll in sugar. Bake for 10 to 11 minutes or until set. Cool. Place a marshmellow on the flat side of a chocolate cookie. Microwave at medium for 10 seconds or until it is softened, top with a peanut butter cookie. Repeat & EAT!
