A Cookie a day ~Swedish Cream Wafers

Well, I woke up this morning, clicked on my computer and it told me it was -18 degrees outside.  Glad I didn't have to get up and out of the house, that's all I can say about that.  I have Cheesy Potato/Ham soup in the crock pot and its smelling good.  Here is today's cookie recipe for you, please share with your friends and family! Yummy cookies and a pic of my Yummy Niece, born 1 week ago, today - Ms. Peyton!

Swedish Cream Wafers
1 c. butter, softened
1/3 c. half & half
2 c. flour
granulated sugar
powdered sugar frosting

With a mixer beat butter for 30 seconds.  Beat in the 1/2 & 1/2 and the flour.  Cover and chill dough for 2 hours.  On a lightly floured surface, roll 1/3 of the dough at a time to a 1/8" thickness.  Keep remaining dough refrigerated until ready to use.  With a 1 1/2" round cookie cutter, cut into rounds.  Dip each round into granulated sugar.  Place on cookie sheet.  Bake at 375 for 7-9 minutes or until edges begin to brown.  Remove and cool. 
FROSTING:
With a mixer beat 1/4 c. softened butter, gradually add one cup of powdered sugar, beat well.  Slowly beat in 1 tbsp. milk and 1/2 tsp. vanilla.  Then beat in another cup of powdered sugar.  Add milk if necessary for spreading consistency.  Tint the color you desire.  Spread about 1 tsp. of frosting on the unsugared side of your cookie, top with another to make a sandwich!
